Devil's Food Cake
Ingredients
- 4 tbs cocoa
- 1 C and 3 tbs sugar
- ¼ lb butter or ½ C shortening
- 1 C flour
- ½ C milk
- 2 eggs, separated
- 1 tsp vanilla
- ½ tsp salt
- ½ tsp cream of tartar
Directions
- Combine 4 tbs cocoa and 3 tbs water in a heavy-bottomed pan over low heat, stirring until the mixture is smooth.
- Remove from heat, stir in milk, and set aside.
- In a separate bowl, combine flour, cream of tartar, and salt and set aside.
- Grease and flour two 8" or 9" round pans or one 9"x13" pan and set aside.
- Cream the butter or shortening and add ½ C of the sugar, beating until the mixture is light.
- Add vanilla and egg yolks one at a time, beating each until light.
- Add the cocoa mixture to the butter mixture and combine well, then add the dry ingredients to the cocoa and butter mixture and combine well.
- In a separate bowl, whip the egg whites until foamy and then add the remaining ½ C of sugar gradually. Continue to whip until the mixture is stiff but not dry.
- Fold the eqq white mixture into the batter and turn into the floured pan or pans.
- Bake at 350° for 30-35 minutes or until the sides of the cake begin to pull away from the sides of the pan and a knife inserted into the center of the cake comes out clean.
- Frost with chocolate buttercream frosting or chocolate fudge glaze
