Devil's Food Cake

Directions

  1. Combine 4 tbs cocoa and 3 tbs water in a heavy-bottomed pan over low heat, stirring until the mixture is smooth.
  2. Remove from heat, stir in milk, and set aside.
  3. In a separate bowl, combine flour, cream of tartar, and salt and set aside.
  4. Grease and flour two 8" or 9" round pans or one 9"x13" pan and set aside.
  5. Cream the butter or shortening and add ½ C of the sugar, beating until the mixture is light.
  6. Add vanilla and egg yolks one at a time, beating each until light.
  7. Add the cocoa mixture to the butter mixture and combine well, then add the dry ingredients to the cocoa and butter mixture and combine well.
  8. In a separate bowl, whip the egg whites until foamy and then add the remaining ½ C of sugar gradually. Continue to whip until the mixture is stiff but not dry.
  9. Fold the eqq white mixture into the batter and turn into the floured pan or pans.
  10. Bake at 350° for 30-35 minutes or until the sides of the cake begin to pull away from the sides of the pan and a knife inserted into the center of the cake comes out clean.
  11. Frost with chocolate buttercream frosting or chocolate fudge glaze
