Chocolate Fudge Glaze
Ingredients
- 2 oz unsweetened baker's chocolate
- 1½ cup sugar
- 1 tbs corn syrup
- ½ C milk
- 4 tbs butter
- 1 tsp vanilla
Directions
- Combine butter, milk, sugar and corn syrup to a heavy-bottomed pan. To this mixture, add the baker's chocolate broken into small pieces. Chocolate can either be broken or cut, since this is only to facilitate melting.
- Stir the mixture over medium-low heat until the mixture reaches a rolling boil. Stir the mixture constantly and fairly rapidly for one minute, and then remove from heat. Cool the mixture. This can be done either in the pan in which the mixture was heated, or in a stainless steel bowl refrigerated.
- Once the mixture has cooled sufficiently, whip the vanilla into the mixture.
Chef's Notes
- When mixed, the frosting has a very thick consistency, and is best used as a glaze rather than a frosting. For this application, it is best to pour the glaze over the item to be glazed and allow the mixture to fall over the sides of the cake. You may have to direct the flow of the glaze with a frosting knife or a spatula. Once the glaze has covered the cake, chill in a refrigerator. The end product will be a cake with a fudge-like outer coating.
