White Cake
Ingredients
- 2¾ C sifted cake flour
- 3 tsp baking powder
- ¾ tsp salt
- 1 C vegetable shortening
- 1½ tsp vanilla
- 1½ C sugar
- 1 C milk
- 8 egg whites
- ½ C sugar
Directions
- Sift flour, baking powder, and salt together.
- Cream shortening, vanilla, and 1½ C sugar together until fluffy.
- Add flour mixture and milk alternately, beating only until smooth after each addition
- In a large bowl, beat egg whites until frothy, beating constantly.
- Add remaining ½ C sugar gradually and continue beating until stiff shiny peaks are formed. Fold into cake batter.
- Grease and flour cake pans. Add batter to pans and bake at 350° until a knife inserted into the middle comes out clean.
- Allow cake to cool in pans for 10 minutes before removing. Frost with basic butter frosting
