Banana Cupcakes

Directions

  1. Combine dry ingredients and set aside.
  2. Peel and mash 3-4 overripe bananas. Black bananas are ok, since they will be mashed beyond recognition.
  3. Add the bananas and shortening to the dry ingredients and mix until it resembles coarse crumbs.
  4. To this mixture, add the buttermilk, the vanilla, and the eggs one at a time beating each for about one minute.
  5. Spoon the mixture into cup-lined cupcake pan (between ½ & ¾) and bake at 350° for 17-19 minutes.
  6. Cool and frost or serve plain.
