Banana Cupcakes
Ingredients
- 2½ C flour
- ½ C shortening
- 1½ C sugar
- 1 C mashed banana (3-4 medium bananas)
- 1 tsp baking powder
- 160 ml buttermilk
- 1 tsp baking soda
- 2 eggs
- 1 tsp salt
- 1 tsp vanilla
Directions
- Combine dry ingredients and set aside.
- Peel and mash 3-4 overripe bananas. Black bananas are ok, since they will be mashed beyond recognition.
- Add the bananas and shortening to the dry ingredients and mix until it resembles coarse crumbs.
- To this mixture, add the buttermilk, the vanilla, and the eggs one at a time beating each for about one minute.
- Spoon the mixture into cup-lined cupcake pan (between ½ & ¾) and bake at 350° for 17-19 minutes.
- Cool and frost or serve plain.
Chef's Notes
- In case you do not have buttermilk, mix one tablespoon vinegar with enough milk to make one cup and allow it to sit for 5-10 minutes
