Steel Cut Oats

  1. Toast Oats: In a large saucepot, melt butter and stir in oats for 2 minutes to toast.
  2. Simmer: Add boiling water, reduce heat, and simmer gently for 25 minutes without stirring.
  3. Add Dairy: Stir in milk and half the buttermilk; cook for 10 more minutes.
  4. Serve: Spoon into a bowl and top with remaining buttermilk, brown sugar, and cinnamon.
