Steak Tartare

  1. Start Fresh: Use very fresh, well-chilled beef. It's crucial for steak tartare
  2. Mix: In a bowl, combine minced beef, shallots, capers, parsley, mustard, oil, and Worcestershire sauce until evenly mixed.
  3. Season: Add salt and freshly ground black pepper to taste.
  4. Plate: Shape into patties or mounds. Make a small well in the center and add an egg yolk, if using.
  5. Serve: Serve immediately with toast or crackers on the side. Cornichons or pickles make a great crunchy, tangy side.
