Shrimp Creole

Directions

  1. Sauté onions, garlic, bell pepper, and celery in bacon grease for 5 minutes.
  2. Add tomato sauce and simmer for 30 minutes.
  3. Add stock and simmer for 10 minutes.
  4. Add tomatoes, green onions, bay leaf, sugar, Tabasco, lemon juice, and seasonings and simmer for 1 hour. One can (14½ oz) of peeled stewed tomatoes, with or without chiles, can be substituted for the fresh tomatoes.
  5. Add shrimp and simmer for 5-7 minutes. Serve hot over rice, garnished with additional parsley.
