Shrimp Creole
Ingredients
- 4 lb shrimp
- ¾ C bacon grease
- 3 stalks celery, chopped
- 2 onions, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 8 oz tomato sauce
- 2 dashes tabasco sauce
- 1 bay leaf
- 1 tsp lemon juice
- 1½ tsp white pepper
- ½ tsp thyme
- ½ tsp basil
- ½ C parsley
- 3 large peeled tomatoes (or one 14.5 oz can of tomatoes)
- 1 bunch green onions, chopped
- 2 tbs sugar
- 2½ C shrimp stock
- Salt, black pepper and cayenne to taste
Directions
- Sauté onions, garlic, bell pepper, and celery in bacon grease for 5 minutes.
- Add tomato sauce and simmer for 30 minutes.
- Add stock and simmer for 10 minutes.
- Add tomatoes, green onions, bay leaf, sugar, Tabasco, lemon juice, and seasonings and simmer for 1 hour. One can (14½ oz) of peeled stewed tomatoes, with or without chiles, can be substituted for the fresh tomatoes.
- Add shrimp and simmer for 5-7 minutes. Serve hot over rice, garnished with additional parsley.
