Scallop Pancakes
Ingredients
- 4 oz scallops
- ½ C flour
- ¼ tsp baking powder
- Salt and pepper, to taste
- 1 C club soda
Directions
- Put all ingredients in the food processor and puree until smooth.
- Heat oil in a frying pan and add ¼ C of the scallop mixture and fry them like pancakes, about 2-3 minutes on each side. Cool on a wire rack.
