Breakfast Sausage Casserole
Ingredients
- 1 can biscuits or 15-20 tater tots (~170 g)
- 1 lb hot sausage
- 6 eggs
- ¾ C milk
- 2 C cheddar cheese (1 lb total, cheddar and pepper jack mix)
Directions
- Liberally grease an 8x8 pan
- Cut the biscuits into 6-8 pieces and add to the greased pan. If you're using tater tots, add them to the greased pan here.
- Brown the sausage in a skillet, drain completely and spread evenly on the biscuits or tater tots
- Beat eggs with milk, add salt and pepper to taste and pour over the sausage and biscuits.
- Add cheese to the top and bake at 400° for 35-40 minutes. To see if it's done, check the middle of the pan.
- Let casserole rest for 5-10 minutes before serving - great with salsa.
Chef's Notes
- I substituted tater tots because I didn't have canned biscuits and cut the amount of cheese in half - it was excellent
- Shredded Gruyere (~8 oz) is a good addition and adds nicely to the crust
- I added fish sauce to the egg seasoning and Louisiana hot sauce. You may also consider adding Colman's dry mustard for a little extra zing
