Roasted Sesame Dressing
Ingredients (6 oz)
- 27 g White sesame seeds (3 tbs)
- 45 g Japanese Kewpie mayonnaise (3 tbs)
- 41 g Neutral-flavored oil (3 tbs)
- 23 g Japanese soy sauce (1½ tbs)
- 15 g Rice vinegar (1 tbs)
- 10 g Mirin (2 tsp)
- 21 g Honey or brown sugar (2-3 tsp)
- 2 g Toasted sesame oil (½ tsp)
- Freshly ground black pepper, to taste
Directions
- Toast Sesame: Toast sesame seeds in a dry pan over medium-high, stirring constantly. Once golden, lower heat and continue until deep brown. Immediately transfer to a plate to cool.
- Grind: Grind toasted seeds with a mortar and pestle until mostly fine, leaving some whole seeds.
- Finish: Add remaining ingredients, mix well until honey is fully dissolved, and adjust seasoning.
- Store: Refrigerate and shake before using. Keeps for several weeks.
Chef's Notes
- You can grind the sesame seeds in a spice grinder, but don't over-grind.
- Avocado oil is ideal for its neutral flavor, though any neutral oil will work.
- Honey or brown sugar can be swapped for another sweetener of your choice.
- Kewpie mayonnaise gives the most authentic flavor.
- Choose Mirin without corn syrup or added sugar.
