Raspberry Oatmeal Bars

  1. Preheat oven to 350°F
  2. Grease a 9x13" baking pan with butter and set aside.
  3. In a large mixing bowl, cream together the butter and brown sugar until smooth.
  4. Add the vanilla extract, rolled oats, flour, salt, and baking powder and stir to combine. Scrape the bottom and sides of the bowl occasionally with a rubber spatula.
  5. Press ¾ of the oatmeal mixture into the bottom of the prepared pan and prick with the tines of a fork.
  6. Spread the jam over the bottom layer.
  7. Crumble the remaining oatmeal mixture over the raspberry jam layer.
  8. Bake for about 45-50 minutes, or until lightly golden brown and the jam is bubbling. Cool completely before cutting into bars.
