Directions

Cake
  1. Combine flour, sugar, cocoa powder and bicarbonate of soda.
  2. Whisk the eggs in a separate bowl with the vanilla, melted butter, oil, milk and vinegar.
  3. Slowly and gradually add the wet ingredients into the dry ingredients. Ensure batter is dry with no lumps and then add the chocolate chips.
  4. Use a metal spoon to divide the mixture evenly into the cupcake cups and bake for 15-18 minutes.
  5. Remove when the cupcakes are golden and springy to the touch and a toothpick inserted in the middle comes out clean. Leave to cool
Frosting
  1. Cream the sugar and butter together until light and creamy. Add the warm melted chocolate.
  2. Pipe the icing with a decorating bag or use an offset spatula
