Queen's Royal Cupcakes
Ingredients
Cake
- 15g vinegar
- 300 ml milk
- 50 ml vegetable oil
- 60g butter (melted and cool)
- 2 eggs
- 5 ml vanilla essence
- 250g self-raising flour
- 75g cocoa powder
- 300g caster sugar
- 10g bicarbonate of soda
- 100g white chocolate chips
Buttercream Frosting
- 90g high percentage dark chocolate
- 100g butter
- 125g icing sugar
- Preheat oven to 150°C
Directions
Cake
- Combine flour, sugar, cocoa powder and bicarbonate of soda.
- Whisk the eggs in a separate bowl with the vanilla, melted butter, oil, milk and vinegar.
- Slowly and gradually add the wet ingredients into the dry ingredients. Ensure batter is dry with no lumps and then add the chocolate chips.
- Use a metal spoon to divide the mixture evenly into the cupcake cups and bake for 15-18 minutes.
- Remove when the cupcakes are golden and springy to the touch and a toothpick inserted in the middle comes out clean. Leave to cool
Frosting
- Cream the sugar and butter together until light and creamy. Add the warm melted chocolate.
- Pipe the icing with a decorating bag or use an offset spatula
