Prik Nam Pla
Ingredients
- 2-12 fresh Thai chilis, chopped
- 30 g garlic (6-8 cloves), finely minced
- 3 tbs fish sauce
- 1½ tbs fresh lime juice
- 2 tsp sugar
Directions
- Combine all the ingredients in a serving bowl and whisk until the sugar is fully dissolved. Adjust the balance with more lime juice, fish sauce, sugar, or chilies to taste. Let the sauce stand for 2-3 minutes to lightly marinate and develop flavor.
Chef's Notes
- Thinly slice the Thai chilies and garlic, mincing the garlic finely if you prefer a smoother bite. Thicker chili slices will deliver more heat, so adjust the cut to your spice tolerance.
