Potato Salad
Ingredients
- 15-18 medium potatoes
- 2½ C mayonnaise or salad dressing
- 4-6 hard boiled eggs
- 2 tbs sweet relish
- 1 tsp dijon mustard
- 1 tsp prepared mustard
- 1 tsp sweet hot mustard
- 1 tsp onion powder
- 1 tsp garlic powder
- 2 tsp Louisiana hot sauce
- 1 tsp salt
- 1 tsp sugar
- 2 tsp balsamic vinegar
- 1 tsp red wine vinegar
Directions
- Wash potatoes and boil them for about 25-30 minutes or until soft.
- Drain the boiling water and rinse the potatoes under cold running water to stop the cooking process.
- Peel the potatoes and set them aside, under refrigeration, if possible. This will make the potatoes easier to mix and less likely to crumble.
- Combine all the remaining ingredients except the relish and eggs and mix thoroughly.
- Pour the mixture and the eggs and relish over the potatoes and mix slowly and completely.
- Refrigerate for at least 4 hours before serving.
