Pork and Tofu

  1. Add salt, MSG, white pepper, and sugar to ground pork and mix well.
  2. Combine soy sauce, oyster sauce, sesame oil, and rice wine and add to the seasoned pork, mixing well.
  3. Incorporate cornstarch fully into pork mixture and allow to marinate for at least 30 minutes.
  4. Cut tofu into ½ " cubes and set aside.
  5. Heat 2 tbs oil in a wok until very hot.
  6. Add the pork, turning frequently to coat all sides with oil. As the pork stir-fries, the bottom of the wok will become coated.
  7. Add the chicken stock slowly to de-glaze the bottom of the wok.
    • Since there is cornstarch in the pork, the mixture will thicken rapidly as it cooks. If you wish to have a thinner sauce, add more chicken stock.
    • In addition, add another 2 tbs of oyster sauce to the pork mixture.
  8. When the pork is nearly cooked, add the cubed tofu and incorporate fully. Tofu, even the hard kind, is fairly soft, so you must take care when mixing. The tofu need only be brought to temperature and become saturated with the sauce, so only another 2-3 minutes of cooking is required once the tofu is added.
  9. Serve with steamed rice with stir-fried vegetables.
