Pork Tenderloin

  1. Trim tenderloins of excess fat.
  2. Combine dry ingredients in a deep vessel and insert tenderloins. Cover and marinate under refrigeration for at least 1 hour, overnight if possible.
  3. Remove tenderloins and drain, reserving the liquid for basting.
  4. Place tenderloins on a charcoal grill over indirect heat, turning occasionally and basting frequently, for about 45 minutes.
  5. Remove the tenderloins from the fire and wrap them tightly in aluminum foil for another 30 minutes.
  6. Thin slice on a bias and serve with vegetables and rice.
