Pepper Oysters

Directions

  1. Poach oysters in liquid or chicken stock until the ends begin to curl and set aside. Grind the pepper, garlic, and salt in a food mill or mortar and pestle, add ½ C of poaching liquid and reserve.
  2. Remove oysters from poaching liquid and return liquid to a boil. Add olive oil, bay leaves, and pepper mixture, and reduce by about half
  3. Re-introduce oysters, bring to to temperature and top with lime juice.
  4. Serve with melba toast or over rice.
