Pepper Oysters
Ingredients
- 1 qt shucked oysters with liquid
- 2 tbs pepper
- 3 cloves garlic
- ½ tsp salt
- 2-3 bay leaves
- 2 tbs olive oil
- 2 tsp lime juice
Directions
- Poach oysters in liquid or chicken stock until the ends begin to curl and set aside. Grind the pepper, garlic, and salt in a food mill or mortar and pestle, add ½ C of poaching liquid and reserve.
- Remove oysters from poaching liquid and return liquid to a boil. Add olive oil, bay leaves, and pepper mixture, and reduce by about half
- Re-introduce oysters, bring to to temperature and top with lime juice.
- Serve with melba toast or over rice.
