Peanut Butter Chocolate Fudge
Ingredients
- 1 C milk
- 1 tsp vanilla
- 3 C sugar
- ¼ C peanut butter
- ½ tsp salt
- ¼ C butter
- 2 tbs light corn syrup
- 3 1-oz. grated chocolate squares
- 85 g coarsely chopped peanuts (unsalted)
Directions
- Bring milk to a boil and remove from heat.
- Add sugar, salt, chocolate, and corn syrup and stir until dissolved.
- Cook covered over medium heat for 2-3 minutes, or until steam washes sugar crystals from the sides of the pan.
- Cook uncovered until mixture reaches 234-240° (soft ball). DO NOT STIR.
- Add vanilla, peanut butter, and butter and beat until mixture is thick and loses its luster.
- Stir in peanuts and ppoon mixture into a buttered 8" square pan. Let stand until firm.
