Basic Pancakes

Directions

  1. Mix the dry ingredients together and add the wet ingredients stirring only enough to mix. You may need more than 1 C of milk if the batter is too thick or if you are using buttermilk instead of regular milk. For best results, rest the batter 20-30 minutes before cooking.
  2. Heat a griddle over medium heat until water drops sizzle on the surface.
  3. When the griddle is heated, grease lightly with vegetable oil or shortening on a paper towel.
  4. Drop the pancake batter by the ladle onto the griddle.
  5. When bubbles form and then break on the surface of the pancake, they are ready to turn.
  6. Remove from the griddle and serve immediately.
