Oysters en Brochette
Ingredients
- 8 oz butter
- 2 tsp salt
- 1 tbs Worcestershire sauce
- 2 tsp Tabasco sauce
- 5 tbs lemon juice
- 2 tbs bacon drippings
- ½ lb thick sliced bacon
- 2 dz cherry tomatoes
- 2 dz oysters and their liquor
- 2 dz mushroom caps
Directions
- In a skillet fry strips of thick-sliced bacon until almost crisp. Remove bacon and reserve bacon drippings.
- Place oysters, cherry tomatoes and mushroom caps in a fireproof container and cover with sauce and bacon cut into 1½" pieces.
- Bake @375° until oysters curl and are hot throughout, about 15 minutes.
- Remove container from oven and spoon sauce and ingredients over toasted French bread. Garnish with chopped spinach.
