Oysters Rockefeller
Ingredients
- 36 fresh oysters on the half shell
- 6 tbs butter
- 6 tbs finely minced raw spinach
- 3 tbs minced onion
- 3 tbs minced parsley
- 5 tbs bread crumbs
- ½ tsp Herbsaint (or Pernod)
- ½ tsp salt
- Tabasco sauce to taste
Directions
- Melt the butter in a saucepan and add all the ingredients except the oysters. Cook, constantly stirring for 15 minutes, then press the mixture through a sieve or a food mill and allow to cool.
- Line six pie tins with rock salt and set 6 oysters in the rock salt on each pie tin. Divide the topping into 36 equal portions and place one portion on each oyster.
- Broil until topping is brown, splash the top of the cooked oysters with anise liquor and serve immediately. This will yield 6 portions of six oysters.
