Oatmeal Butterscotch Cookies
Ingredients
- 1¼ C flour
- 3 C oatmeal (Quick or Old Fashioned uncooked)
- 1 C butter
- 12 oz butterscotch morsels
- ¾ C sugar
- ¾ C brown sugar
- 2 eggs
- 1 tsp vanilla
- 1 tsp baking soda
- ½ tsp salt
- ¾ tsp cinnamon
Directions
- Preheat oven to 375°.
- Combine flour, salt, cinnamon, and baking soda and set aside.
- Cream butter with sugars and add eggs and vanilla.
- Add dry ingredients and mix thoroughly, then add morsels and oatmeal and turn until combined.
- Spoon by tablespoons onto an ungreased cookie sheet and bake for 7-9 minutes. Cool on rack. Cookies will firm slightly as they cool.
