Thai Seafood Sauce (Nam Chim)
Ingredients
- 6-8 Thai chili peppers, minced
- 2-3 cloves garlic, minced
- ½ tsp sugar
- 2 tbs Thai fish sauce
- 2 scallions, minced
- Juice of 2-3 limes (3-4 tbs)
Directions
- Combine all ingredients. Taste and adjust seasonings as needed. Some limes are very tart and require additional sugar. However, add sugar very carefully, as fixing a sauce that is too sweet can be tricky
- Use this sauce for dipping boiled or steamed crab, lobster, shrimp, clams, or mussels
