Miso Eggplant (V)

Directions

  1. Preheat the oven to broil.
  2. Halve eggplants longways, cut into 2" sections, and score the flesh in a diamond pattern
  3. Sear in Avocado oil over medium heat in a non-stick pan, 2-3 minutes per side. Remove to a baking tray
  4. Combine miso, mirin, sesame oil, coconut aminos and maple syrup and brush onto eggplant
  5. Broil 4-6 minutes or until caramelized
