Miso Eggplant (V)
Ingredients
- 3 Japanese eggplant, sliced in half and scored
- Avocado oil
- 2 tbs miso paste
- 1 tsp sesame oil
- 2 tsp mirin
- 1 tbs coconut aminos
- 1 tbs maple syrup
Directions
- Preheat the oven to broil.
- Halve eggplants longways, cut into 2" sections, and score the flesh in a diamond pattern
- Sear in Avocado oil over medium heat in a non-stick pan, 2-3 minutes per side. Remove to a
baking tray
- Combine miso, mirin, sesame oil, coconut aminos and maple syrup and brush onto eggplant
- Broil 4-6 minutes or until caramelized
