Marinara Sauce
Ingredients
- 2 cans San Marzano canned tomatoes (28 oz)
- 2 tbs tomato paste
- 1 onion, julienned
- 6 cloves garlic, minced
- 6 basil leaves
- 1 C red wine
- dash olive oil
- Salt and pepper to taste
Directions
- Sauté onions in olive oil over medium-low heat and season with salt and pepper. Sweat the onions until they are soft and translucent, about 10 minutes.
- Add the garlic and sweat another 3 minutes. Add basil leaves and red chili flakes, if desired, and wilt for 2 minutes.
- Add tomato paste and cook for 3-5 minutes to bring out the sugars in the tomatoes.
- Turn up the heat to medium high, deglaze with the wine and reduce by half, about 3-5 minutes.
- Reduce heat to medium low and add the canned tomatoes. Cook on medium low for 90 minutes.
- Remove the sauce from heat and puré with an immersion blender to desired texture. Season with salt and pepper.
