Marinara Sauce

  1. Sauté onions in olive oil over medium-low heat and season with salt and pepper. Sweat the onions until they are soft and translucent, about 10 minutes.
  2. Add the garlic and sweat another 3 minutes. Add basil leaves and red chili flakes, if desired, and wilt for 2 minutes.
  3. Add tomato paste and cook for 3-5 minutes to bring out the sugars in the tomatoes.
  4. Turn up the heat to medium high, deglaze with the wine and reduce by half, about 3-5 minutes.
  5. Reduce heat to medium low and add the canned tomatoes. Cook on medium low for 90 minutes.
  6. Remove the sauce from heat and puré with an immersion blender to desired texture. Season with salt and pepper.
