Easy Potato Leek Soup
Ingredients
- 1 medium leek, coarsely chopped
- 6-8 button mushrooms, coarsely chopped
- 4 C chicken stock (vegetable stock will substitute)
- Cooking oil
- 1 C Instant mashed potato flakes
- 1-1½ C milk or Half-and-half
- Grated Swiss cheese
Directions
- Coarsely chop leeks and mushrooms and sweat them in the cooking oil.
- Add 4 C of chicken stock and bring to a boil. Add instant mashed potato flakes and return to a boil. Once the soup boils again, it is ready.
- Finish with 1-1½ C of milk and serve topped with grated Swiss cheese
