Easy Potato Leek Soup

Directions

  1. Coarsely chop leeks and mushrooms and sweat them in the cooking oil.
  2. Add 4 C of chicken stock and bring to a boil. Add instant mashed potato flakes and return to a boil. Once the soup boils again, it is ready.
  3. Finish with 1-1½ C of milk and serve topped with grated Swiss cheese
