Hot Chocolate

  1. In a medium saucepan, mix dry ingredients, gradually add water, then mix until smooth.
  2. Carefully bring to a boil over medium heat. Reduce heat and simmer for 2 minutes.
  3. Add milk. If calories and fat aren't an issue, use whole milk. Its extra fat enhances the chocolate flavor and produces a fuller flavor overall.
  4. Turn the heat back to medium and heat just to scalding - do not boil.
  5. Add vanilla and whip with a whisk or rotary beater to develop a froth and prevent the formation of "skin". Serve at once.
  6. You can adjust the cocoa and sugar depending on your preferences, but it's best to adjust bit by bit, testing in between.
