Hot Chocolate
Ingredients
- ¼ C cocoa
- ¼ C sugar
- pinch salt
- 4 C milk
- ½ C water
- ½ tsp vanilla
Directions
- In a medium saucepan, mix dry ingredients, gradually add water, then mix until smooth.
- Carefully bring to a boil over medium heat. Reduce heat and simmer for 2 minutes.
- Add milk. If calories and fat aren't an issue, use whole milk. Its extra fat enhances the chocolate flavor and produces a fuller flavor overall.
- Turn the heat back to medium and heat just to scalding - do not boil.
- Add vanilla and whip with a whisk or rotary beater to develop a froth and prevent the formation of "skin". Serve at once.
- You can adjust the cocoa and sugar depending on your preferences, but it's best to adjust bit by bit, testing in between.
