Grits and Sausage Casserole
Ingredients
- 3 C water
- 1 cup quick-cooking grits
- ¾ tsp salt, divided
- 2 lbs bulk pork sausage, cooked and drained
- 2 C shredded cheddar cheese, divided
- 3 large eggs
- 1½ C whole milk
- 2 tbs butter, melted
- Pepper to taste
Directions
- In a saucepan, bring water to a boil
- Slowly whisk in the grits and ½ tsp salt
- Reduce heat, cover and simmer for 5 minutes, stirring occasionally
- In a large bowl, combine grits, sausage and 1½ C cheese
- Beat the eggs and milk and stir into grits mixture
- Add the butter, pepper and remaining salt
- Transfer to a greased 13x9 " baking dish.
- Bake, uncovered, at 350° until a knife inserted in the center comes out clean, 1 hour.
- Sprinkle with remaining cheese and bake 15 minutes longer or until cheese is melted.
- Let stand for 5 minutes before cutting
