Grilled Pepper and Black Olive Relish (V)
Ingredients
- ¼ C pitted black olives, chopped
- ¼ C grilled red bell peppers, seeded and diced
- ¼ C grilled yellow peppers seeded and diced
- 2 tbs crushed red pepper flakes
- 1 tbs fresh garlic
- 2 tbs fresh thyme
- ¼ C chopped fresh parsley
- 2 tbs sherry vinegar
- 1 tbs honey
- 3 tbs olive oil
- Salt and freshly ground pepper to taste
Directions
- In a mixing bowl combine all ingredients and season to taste with salt and freshly ground pepper. Serve with grilled chicken or fish.
