Grilled Catfish
Ingredients
- 3 lbs catfish fillets
- ½ C olive oil
- 1 tbs brown sugar
- 3 tbs soy sauce
- 1 tsp ground ginger
- ¼ tsp black pepper
- 2 cloves garlic, crushed
- 1 tsp rice wine
- 1 tsp Louisiana hot sauce
- Cajun seasoning
Directions
- Combine olive oil, brown sugar, soy sauce, ginger, black pepper, garlic, rice wine, and hot sauce in a deep glass vessel.
- Add the catfish fillets, turning to coat all sides with the marinade. Cover and refrigerate for at least six hours.
- Remove the fish, reserving the marinade and season both sides with Cajun seasoning to taste.
- Place fish in a grilling basket and grill over indirect heat, basting with the reserved marinade as required.
- Grill for 15-20 minutes or until fish flakes when tested. Serve with steamed vegetables and wild rice.
