Grilled Catfish

  1. Combine olive oil, brown sugar, soy sauce, ginger, black pepper, garlic, rice wine, and hot sauce in a deep glass vessel.
  2. Add the catfish fillets, turning to coat all sides with the marinade. Cover and refrigerate for at least six hours.
  3. Remove the fish, reserving the marinade and season both sides with Cajun seasoning to taste.
  4. Place fish in a grilling basket and grill over indirect heat, basting with the reserved marinade as required.
  5. Grill for 15-20 minutes or until fish flakes when tested. Serve with steamed vegetables and wild rice.
