French-Fried Eggplant

  1. Peel eggplant and cut to size of large French fries and
  2. Soak 30 minutes in salted water, then Rinse and pat dry.
  3. Make an egg wash with egg and milk and season well with salt and pepper.
  4. Dip eggplant into batter, roll in flour and deep fry until golden.
  5. Sprinkle with additional salt and serve with powdered sugar.
  6. Serves 4 as hors d'oeuvre with cocktails, or as vegetable with entree.
