Egg Salad
Ingredients
- 6 hard-cooked eggs, diced
- 3 tbs mayonnaise
- 1 tbs Dijon mustard
- 1 tbs sweet pickle relish
- 1 tbs Louisiana hot sauce
- 1 tsp horseradish
- 1 stalk celery, finely diced
- 1 tsp salt
- ½ tsp curry powder
- ½ tsp black pepper
- ½ tsp onion powder
- ½ tsp garlic powder
- ½ tsp sugar
Optional Ingredients
- 1 small red onion or shallot, finely diced
- 1 tsp Worcestershire sauce
- 1 tsp lemon juice
Directions
- Dice the eggs using a knife or an egg slicer and set aside. This is one time in which a gadget is worth its weight
- Add the mayonnaise, Dijon, hot sauce, relish, and seasonings. If you are using any optional ingredients, add them now
- Gently fold with a silicon spatula to avoid breaking the eggs into smaller pieces
