Crabwich
Ingredients
- 1 large egg yolk
- 6 tbs butter, melted and clarified
- 1 tbs lemon juice
- 1 tbs cream cheese, softened
- 1 tomato
- 6-8 oz cooked crab meat
- sourdough bread
Directions
- Whisk yolk until creamy, adding butter slowly.
- Add lemon juice and cream cheese and mix in a stand mixer until creamy.
- Add crab and whisk by hand.
- Toast and butter bread. Add tomato slices, salted and peppered to your taste
- Top toast with crab mixture and serve
