Country-Style Biscuits
Ingredients
- 240 g flour
- 20 g baking powder
- 9 g sugar
- 3 g cream of tartar
- 3 g salt
- 100 g shortening
- 160 ml milk
Directions
- Sift dry ingredients together and cut in the shortening until the mixture resembles coarse crumbs.
- Make a well in the center, add the milk all at once, and stir just until dough clings together.
- Knead gently on a lightly floured surface for 10-12 strokes.
- Roll or pat to ½" thickness and cut with a 2½" biscuit cutter, dipping the cutter into flour before each cut.
- Place biscuits on an ungreased baking sheet and bake at 450° for 10-12 minutes or until golden brown.
Chef's Notes
- Handle the dough as little as possible, as this will keep them light and fluffy.
