Cornbread
Ingredients
- 120 g flour
- 135 g corn meal
- 150 g sugar
- 15 g baking powder
- 3 g salt
- 240 ml milk
- 1 egg, beaten
- 30 ml (30 g) bacon fat or cooking oil
Directions
- Preheat oven to 425°, and butter a 12" cast iron skillet, an 8" square cake pan, or a 9x13" cake pan. The 9x13 pan makes the pieces a little thinner, which increases the surface area for butter
- Mix the milk, egg and fat, then sift in the dry ingredients
- Pour/spoon into the pan and bake for 15-20 minutes, or until a knife inserted in the middle comes out clean
