Corn Tempura (v)
Ingredients
- 2 ears of corn (1½ C or 9 oz)
- 85 g flour
- ½ tsp baking powder
- 150 ml club soda
- 1 egg
- Salt and pepper to taste
- Sour cream or crème fraîche and smoked salmon (serving suggestion)
Directions
- Heat oil in a frying pan and add ¼ C of the tempura mixture and fry them like pancakes, about 2-3 minutes on each side.
- Cool on a wire rack and serve with sour cream and caviar or smoked salmon.
Chef's Notes
- Use half the club sode to mix the lumps out of the flour mixture - this is much easier. The final product should be slightly more liquid
