Chicken Soup Dumplings

Directions

  1. Bring broth and water to a boil in a large soup pot. Add roux and stir until completely dissolved.
  2. Add cut-up hen, onions, bell pepper, celery, bay leaves and Cajun seasoning. Simmer partially covered for 2.5 hours over medium heat.
  3. Remove bay leaves. Add the green onions and parsley and stir.
  4. For the dumplings, mix the flour, shortening, baking powder and Cajun seasoning. Drop into the soup with a tablespoon while the liquid is at a gentle boil.
  5. Let cook uncovered for 10 minutes, then cover and cook another 20 minutes.
