Chicken and Dumplings
Ingredients
Chicken Soup
- 4½ C chicken stock
- 3 C water
- 1 C roux
- 5½ lb hen, cut into 12 pieces
- 2 medium onions, chopped
- 2 medium green bell pepper
- 1 stalk celery
- 2 bay leaves
- 4 tsp Cajun seasoning
- 1 bunch green onions
- 1 bunch parsley
Dumplings
Directions
- Bring broth and water to a boil in a large soup pot. Add roux and stir until completely dissolved.
- Add cut-up hen, onions, bell pepper, celery, bay leaves and Cajun seasoning. Simmer partially covered for 2.5 hours over medium heat.
- Remove bay leaves. Add the green onions and parsley and stir.
- For the dumplings, mix the flour, shortening, baking powder and Cajun seasoning. Drop into the soup with a tablespoon while the liquid is at a gentle boil.
- Let cook uncovered for 10 minutes, then cover and cook another 20 minutes.
