Chicken Tortillas

  1. Combine juice from the two limes, olive oil, garlic, salt, and Tabasco sauce. Add the chicken and marinate for 1 hour at room temperature or overnight in the refrigerator.
  2. Stack tortillas, wrap in foil, and set aside. Place chicken on prepared grill about 8" from heat, and grill, turning frequently, about 16-20 minutes or until the interior temperature is 165°.
  3. Remove chicken and cut into ½" strips. Heat tortillas in foil on the grill, turning once or twice.
  4. To assemble, place chicken inside tortilla, top with cheese, lettuce, tomatoes and salsa. Roll up tortillas and serve immediately.
