Chicken Tortillas
Ingredients
- 4 boneless skinless chicken thighs
- 2 limes
- 1 clove garlic, crushed
- 3 tbs olive oil
- ½ tsp salt
- ¼ tsp Tabasco sauce
- 3 C lettuce, shredded
- 2 C tomatoes, diced
- 1½ C jack cheese, shredded
- 1 large jar salsa
- 12 flour tortillas
Directions
- Combine juice from the two limes, olive oil, garlic, salt, and Tabasco sauce. Add the chicken and marinate for 1 hour at room temperature or overnight in the refrigerator.
- Stack tortillas, wrap in foil, and set aside. Place chicken on prepared grill about 8" from heat, and grill, turning frequently, about 16-20 minutes or until the interior temperature is 165°.
- Remove chicken and cut into ½" strips. Heat tortillas in foil on the grill, turning once or twice.
- To assemble, place chicken inside tortilla, top with cheese, lettuce, tomatoes and salsa. Roll up tortillas and serve immediately.
