Chicken Rochambeau
Ingredients
- 4 slices toast
- 4 large slices roast chicken
- 4 large slices ham
- ¼ lb fresh mushrooms
- 1 tbs butter
- 1 C beef stock
- Juice of ½ lemon
- 1 tbs parsley, minced
- 1 C Hollandaise sauce
- 1 C Marchand du Vin
- Dash Worcestershire sauce
- Salt and pepper to taste
Directions
- Fry the ham and warm the chicken slices. As an alternative to roast chicken, you may grill ½ a chicken breast pounded thin for each person.
- Place the toast or an English muffin on the plate, then the ham, then a generous spoonful of Marchand du Vin, then the chicken, then top with the Hollandaise sauce
