The Dugas Cheesecake

  1. Prepare spring-form pan by lining bottom with waxed paper or aluminum foil. Butter and flour pan.
  2. Crush crackers and mix with sugar, butter, and cinnamon. Press into bottom of pan.
  3. Let sour cream and cream cheese come to room temperature, then mix flour with sugar.
  4. In a large bowl, beat softened cream cheese until fluffy. Add sugar/flour mixture a little at a time while beating cheese.
  5. After sugar/flour is added, beat in one egg at a time, then add vanilla and fold in sour cream and butter.
  6. Pour batter into pan and put into a 500° oven for 12 minutes, then reduce heat to 250° and bake for 1 hour.
  7. Turn oven off and leave cake in overnight to cool.
  8. Refrigerate cake after removing from the oven
