The Dugas Cheesecake
Ingredients
- 4 8oz blocks cream cheese
- 1½ C sugar
- 1 pint sour cream
- 5 extra large eggs (6 large)
- 2 tbs flour
- 1 tsp vanilla
- 2 tbs melted butter
- Juice of ½ lemon (optional)
Crust
- 2 tbs sugar
- 1 package graham crackers (12 or so)
- 2 tbs melted butter
- dash cinnamon
Directions
- Prepare spring-form pan by lining bottom with waxed paper or aluminum foil. Butter and flour pan.
- Crush crackers and mix with sugar, butter, and cinnamon. Press into bottom of pan.
- Let sour cream and cream cheese come to room temperature, then mix flour with sugar.
- In a large bowl, beat softened cream cheese until fluffy. Add sugar/flour mixture a little at a time while beating cheese.
- After sugar/flour is added, beat in one egg at a time, then add vanilla and fold in sour cream and butter.
- Pour batter into pan and put into a 500° oven for 12 minutes, then reduce heat to 250° and bake for 1 hour.
- Turn oven off and leave cake in overnight to cool.
- Refrigerate cake after removing from the oven
