Cheese Grits
Ingredients
- 1 C grits
- 2 C vegetable stock
- 1 C milk
- 1 C half and half
- 4-8 oz cheese
Directions
- Bring stock to a boil and whisk in grits.
- As the stock begins to thicken, gradually add the milk mixture.
- Stir continuously as the mixture thickens.
- When about ¾ of the milk mixture has been incorporated, add the cheese and stir as it melts.
- Incorporate the remaining milk mixture and continue stirring to make sure the grits don’t stick. The grits should be rich and creamy but not too thick.
Chef's Notes
- You can use pepper jack or a cheddar blend. I have also used a cheese called “Smoked Cajun”, available from Aldi and Trader Joe’s, and it was very nice
