  1. Mix eggs, milk, creole mustard, and hot sauce, and add the dry ingredients. Stir until the consistency of the mixture resembles heavy cream. Allow the batter to sit for 1 hour.
  2. Add the crawfish tails to the batter and stir to coat thoroughly. Add the battered tails to the frying oil heated to 350°.
  3. Fry for 2-3 minutes or until golden brown. Drain on a wire rack and serve with your choice of dressings. Also works well in salads and po-boy sandwiches.
