Cajun Beef Casserole
Ingredients
- 1 package (8½ oz) cornbread/muffin mix
- 500 g ground beef
- 2 cans (14½ oz each) diced tomatoes, drained
- 2 C frozen mixed vegetables, thawed (350 g)
- 6 oz tomato paste
- 1-2 tsp Cajun seasoning
- ½ lb shredded cheddar cheese
- 2 green onions, thinly sliced
Directions
- Prep: Preheat oven to 350°F. Prepare cornbread batter per package directions.
- Layer Batter: Spread batter into a greased 11x7" baking dish.
- Cook Beef: Brown beef in a skillet over medium heat; drain. Add tomatoes, vegetables, tomato paste, and seasoning. Bring to a boil, then simmer uncovered for 5 minutes.
- Assemble: Spoon beef mixture over the batter and sprinkle with cheese.
- Bake: Bake uncovered for 25-30 minutes, until golden.
- Finish: Garnish with green onions and serve.
