Brined Turkey
Ingredients
- 450 g kosher salt
- 100 g sugar
- 3 tbs minced garlic
- 1 tbs black pepper
- 60 ml Worcestershire sauce
- 7.5 l cold water
Directions
- Combine water, salt and sugar and brine the turkey for 4-6 hours (assume 12 lb turkey).
- Rinse and pat dry and refrigerate uncovered on a wire rack for 8-24 hours.
- Brush breast with 2 tbs melted butter and place breast-side down in a V rack lined with foil (and vent holes).
- Brush with 2 tbs melted butter on the bottom and bake @400° for 45 minutes.
- Remove and flip, return to the oven for another 50-60 minutes.
- Turkey is done when the breast is 165°, and the thigh is 175°. Rest for 30 minutes before carving.
