DeKoster Breakfast Casserole
Ingredients
- 1 box seasoned croutons
- ¾ C of vegetables, such as zucchini, broccoli, onion, mushrooms, green or red pepper
- 1 C shredded cheddar cheese
- 1 can reduced fat cream of mushroom soup
- 2 C milk
- 1 C chopped ham or sausage
- 1 C shredded mozzarella cheese (or 2 cups combination)
- 10 eggs
- Parsley or Cilantro
Directions
- Coat 9 x 13 glass pan with non-stick cooking spray and fill the bottom with croutons.
- Layer 1/2 cup cheese, meat and vegetables on top of croutons.
- Mix eggs, milk and soup thoroughly and pour over mixture.
- Sprinkle with remaining cheese and lightly cover with parsley or cilantro.
- Cover and refrigerate overnight.
- Cook 45 minutes - 1 hour at 325-350° degrees. Let stand before cutting.
