Black-eyed Pea Salad
Ingredients
- 1½ C cooked or canned black-eyed peas
- ¾ C bell pepper, chopped
- ½ C celery, chopped
- ½ C red onion, chopped
- ¼ C onion, chopped
- ¼ C vegetable oil
- ¼ C sugar
- 2 tbs cider vinegar
- 1 clove garlic, minced
- ½ tsp salt
- ½ black pepper
- ½ tsp hot sauce
Directions
- In a large bowl, combine the peas, peppers, and onions.
- Combine oil, sugar vinegar, salt, pepper, hot sauce, and garlic and add to the peas.
- Toss to coat completely and chill for at least 2 hours for the flavors to combine.
