Basil Grilled Chicken
Ingredients
- 4 chicken thighs
- ¾ tsp ground pepper
- ½ C butter, melted
- ¼ C chopped fresh basil
- ½ C butter, softened
- 2 tbs minced fresh basil
- 1 tbs Parmesan cheese
- ¼ tsp garlic powder
- dash salt, pepper
Directions
- Press pepper into meaty sides of chicken thighs. Combine melted butter chopped basil and stir well. Brush chicken lightly with melted butter mixture.
- Combine softened butter, minced fresh basil, Parmesan cheese, garlic powder, salt and pepper in a small bowl. Beat at low speed with an electric mixer until well blended and smooth. Transfer to a small serving bowl and set aside.
- Grill chicken over medium coals 8-10 minutes per side, basting frequently with remaining melted butter mixture. Serve grilled chicken with basil-butter mixture. Garnish with fresh basil sprigs.
