Basic Waffles
Ingredients
- 2 C flour
- 4 tsp baking powder
- ¼ tsp baking soda
- ½ tsp salt
- ¼ C sugar
- 2 C milk
- 2 eggs
- ½ C butter, melted
- 2 tbs oil
- 1 tsp vanilla
Directions
- Mix Dry: Sift dry ingredients together.
- Add Wet: Whisk eggs into milk and stir into dry ingredients.
- Finish Batter: Add butter, oil, and vanilla; fold gently with a silicone spatula. Do not overmix, some lumps are fine.
- Cook Waffles: Preheat a Belgian waffle iron. Pour ½ cup batter onto the center and spread outward in a circular motion.
Chef's Notes
- For a lighter waffle, separate the eggs: mix yolks into the batter, whip whites to stiff peaks, and gently fold them in.
- You can swap some milk for buttermilk for extra tang, and add cinnamon if desired.
- For savory waffles, omit the vanilla and reduce the sugar by 50%.
