Basic Brine
Ingredients
- 16 cups water (One gallon)
- 150 g cup kosher salt
- 135 g white sugar
- 2 heads garlic, crushed and chopped
- 4 g dried sage, or to taste
- 5 g dried basil, or to taste
- 1 tbs whole black peppercorns
- 1 large bay leaf
Directions
- Bring water to a boil and add all ingredients, making sure that the sugar and salt are fully dissolved.
- Remove from heat and cool for 2 hours before using. Chicken should brine for 8-12 hours and turkey 12-24.
