Baked Redfish
Ingredients
- 1 cleaned redfish (5 lb or more)
- 3 medium onions, chopped
- 1 bell pepper, chopped
- 1 small can tomato sauce
- 1 dash Worcestershire sauce
- 1 stick butter
- ½ tsp garlic powder
- pinch of sugar
- Salt and pepper, to taste
Directions
- Season fish with salt and pepper and leave at room temperature while preparing the vegetable sauce.
- Melt butter and sauté the onions and bell pepper until the onions are translucent. Add tomato sauce, Worcestershire, sugar, and garlic powder and stir well. Cover and simmer for 45 minutes.
- Place fish in a baking dish and cover with vegetable sauce over the top and inside the body cavity. Bake at 325° for 45 minutes to 1 hour, or until the internal temperature reads 145°.
Chef's Notes
- Add equal parts of cream of mushroom, cream of shrimp, and cream of chicken soup to the vegetable sauce while it is simmering.
